Shiitake is the most cultivated mushroom in the world. It is widely used in cooking. There are a huge number of recipes for soups, sauces, seasonings, and drinks from shiitake in oriental cuisine. During the Chinese dynasty the Great Ming Shiitake was documented to be used in a decoction to prolong youth and cure diseases. Shiitake cap is rich in nutrients, it contains 18 amino acids, including 8 essential ones. Shiitake mushrooms is good as an immunostimulant, has antibacterial and antiviral activity. Shiitake is especially useful for restoring the body from severe exhaustion after a serious illness, injury or surgery.

Shiitake contains the polysaccharide lentinan, which has unique anti-tumorigenic properties, phytoncides with anti-fungal activity, and create unfavorable conditions for the survival of viruses. It also stimulates hormones secretion produced by thyroid and adrenal glands.
